What to expect

Ciel Bleu restaurant offers panoramic views of the city of Amsterdam from its 23rd floor and has been awarded two Michelin stars. The ultimate Ciel Bleu experience involves exceeding our guests' expectations, not only with regard to service, but also to our dishes. The ambition is high: achieving the highest possible is one of our goals and this is only possible with good organization within the kitchen. 

As Sous Chef you are, together with the Executive Chef and Manager and the Chef de Cuisine, responsible for the daily management in the kitchen. As Sous Chef you will take over the tasks of the Chef in his/her absence. You will be responsible for the conception and preparation of various dishes at a high level, the execution of mise en place activities, the cleaning of the kitchen, the optimal functioning of the assigned partie and the development of new items on the menu.

Your main tasks will be: 

  • Direct and coach student chefs, (demi-) chef de parti's and junior sous chef;
  • Contributing to the renewal of the menu, the development of recipes and the optimization of work processes;
  • Preparing and preparing dishes in accordance with the set standards, recipes and planning;
  • Supervising the quality and progress of work in the kitchen;
  • Making suggestions to the chef;
  • Contributing to the development of products for the menu;
  • Ensuring the quality, taste, texture and color of dishes and adjusting them when necessary;
  • Contributing to good cooperation between the service and culinary team.

Don’t worry, you will not work alone. Besides your own team, you will also work closely with other departments in the hotel. Only by working together can we achieve the best results. There will be rotating shifts throughout the week. You will work 5 days a week, 7,6 hours a day. You are also available to work on public holidays.

  • Contract:  1 year with the possibility of extending. We want you to stay!;

  • You have a minimum of 2 years leadership experience in a similar position in the higher end;
  • You have completed a chef's education;
